Executive Chinese Chef
Job Function: Food Production
Band : Blue
Requirement:
- Have required experience as ‘Executive Chinese Chef position at least for 2 years in a 5 star hotel or premium Chinese Restaurant
- Highest standards on food quality and contemporary presentation expected
- English requirement : Advanced level, Bahasa and Hokkien
- Excellent technical knowledge of authentic Cantonese cuisine and restaurant operations
- Candidate should have a strong personality, good manner, honest, friendly and sociable (good with people)
- Energetic, self-motivated and excellent communication skills
- Good team player, reliable person, and ability to work independently under pressure
- Strong hospitality and communication skills
- Good leadership and management skills
- Indonesian experience an advantage
Job Description:
• In charge of Chinese kitchen operation, including banqueting and All day dining Chinese food.
• Will lead a 30 chef strong team for the 88 seat Jade restaurant which has 5 private rooms and banquet up to 120 tables for sit down weddings
• Ensures compliance with all Food & Beverage policies, standards and procedures.
• Reports to Executive Chef
• Supported by Expat Dim Sum Chef
• Performs all duties of kitchen associates as required.
• Recognizes superior quality products, presentations and flavor.
• Maintains food preparation handling and correct storage standards.
• Maintains purchasing, receiving and food storage standards.
• Ensures compliance with all local, state and federal (Health Department) regulations.
• Supports procedures for food & beverage portion and waste controls.
• Calculates accurate theoretical and weighted food costs.
• Follows proper handling and right temperature of all food products.
